To Scape or not to Scape?

YUMM Garlic Scapes ~ what to do with them?

Last year I used a portion of my scapes and made pesto. I was really intrigued by the bulbs and cost several open.

They were AMAZING. If you did not know it was a Garlic Scape you would have guessed some sort of exotic Artichoke.

Hormiga’s Pesto:

  • Garlic Scapes
  • Olive Oil
  • Parmasean / Romano Cheese 
  • Nuts ~ Walnut, Almond, Pine ~ your Choice
  • Garlic
  • Add additional Greens ~ basil, cilantro, leafy greens to taste

Roughly chop scapes, bulbs and all and put into a food processor along with the Nuts, Cheese and pulse.

Scrape sides of the processor and push down mixture to bottom. Restart and drizzle olive oil in steady stream until mixture is smooth

Refrigerate the pesto. I have frozen batches for use through out the year until I make a new batch.
