Let Them Eat Radishes!!

Some time ago I was listening to an NPR story about the boats that travel on the Seine River.  Picking up supplies, and dropping off supplies traveling from town to town.  The story spoke about the rhythm of the river the connectedness to the towns and eating food that is in season.  It was also about not wasting anything. 

The story when on to talk about different recipes and the one that reached out and grabbed me was the Radish Top Soup.  I made a stop on the way home and picked up several bunches of radishes more interested in the leaves than the actual radishes and made my first radish top soup.

Over the years I have embellished and refined this recipe adding feta as a garnish ~ absolutely wonderful in a cold soup and helps off set the spice and fire of the radishes.  I have also added various other greens into the mix ~ broccoli rabe that is growing out of control, mustard greens,

I also love the Yellow flowers from from Kale, bok choy as a garnish. 

I have used a variety of root vegetables from the garden ~ Daikon Radishes, Turnips, Salad Turnips just about anything with a leafy green leaf can get added to the mix. 

Disclaimer ~ I never measure anything so you will have to experiment to get a soup to your taste.  

Radish Top Soup

Just about any spicy root veggie will do ~ Radish, Turnip, Daikon 

Here’s what you need:

Lots of leafy greens with vegetables ( turnips, radish, daikon etc) attached. 

At farmers markets these are often cut off when sold so ask for them

You will need LOTS of greens.  They really reduce down when they are sautéed.  Here is where I add other greens ~ Mustard, other leafy greens, broccoli rabe greens from my garden are great. 

Radish ~ cut 2-3 into chunks.  A portion will be pureed into the soup and some will be used as garnish on the finished soup

  • Olive Oil
  • Garlic
  • Vegetable Stock

Tear greens into chunks and sauté in large pot with garlic. 

Once wilted add vegetable stock and some of the chopped Radish and stock. 

Transfer to a blender and puree the mixture.

Taste and season to taste with salt, pepper, or any other favorite spice.  

Refrigerate till cold and serve with garnish of your choice

Add some feta, sliced radish, flowers
